Description

This White Chocolate Raspberry Mousse combines creamy white chocolate and fresh raspberries for an irresistible treat. Quick to prepare, it’s a delightful dessert perfect for parties or a lovely night in.


Ingredients

  • 1/4 cup (60 ml) whipping cream or heavy cream
  • 4 ounces (112 grams) full-fat cream cheese
  • 1/3 cup (56 grams) white chocolate chopped and melted
  • 1/2 cup (120 grams) plain greek yogurt
  • 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
  • fresh raspberries for garnish, optional

Instructions

  • In a small bowl, whip the cream with an electric mixer until stiff peaks form, making sure not to over mix.
  • In a separate bowl, combine the cream cheese and melted white chocolate with the same beaters until smooth.
  • Add Greek yogurt to the mixture and blend well before stirring in the mashed raspberries.
  • Gently fold in all but a tablespoon of the whipped cream, preserving its lightness.
  • Spoon the mousse into two serving glasses, and serve immediately or chill for up to eight hours. The mousse thickens and softens when chilled.
  • Top with the reserved whipped cream and garnish with fresh raspberries if desired.

Notes

Make sure the cream cheese is at room temperature for easier mixing.
Chilling the mousse enhances its flavor and texture, so consider making it a few hours ahead of serving.
This dessert can be customized with other berries if you prefer.
