- 1 yellow pepper, thinly sliced
- 1 red pepper, thinly sliced
- 1 red onion, thinly sliced
- 1 small zucchini, halved and thinly sliced
- 3 tablespoons olive oil
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Kosher salt
- Fresh cracked pepper
Instructions
- Preheat the oven to 400°F and prepare a large baking sheet lined with parchment paper.
- Place chickpeas, peppers, onion, and zucchini in a single layer on the baking sheet.
- Drizzle with olive oil and season with chili powder, cumin, garlic powder, paprika, oregano, salt, and pepper.
- Toss everything until evenly coated with spices and oil.
- Roast in the oven for 12 to 14 minutes until veggies are blistered.
- (Optional) Turn on the broiler for an additional 1 to 3 minutes for extra char.
- Assemble fajitas in tortillas and add your favorite toppings.
Notes
Don’t overcrowd the baking sheet for even roasting.
Broiling helps to achieve a desired char; watch carefully to avoid burning.
