Description

These Vegan Sheet Pan Chickpea Fajitas are a flavorful and colorful meal perfect for busy weeknights. Bursting with spices and vibrant veggies, they’re easy to prepare and absolutely delicious, making healthy eating enjoyable and satisfying.


Ingredients

  • 1 (15 oz.) can chickpeas, drained
  • 1 yellow pepper, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 red onion, thinly sliced
  • 1 small zucchini, halved and thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Kosher salt
  • Fresh cracked pepper

Instructions

  • Preheat the oven to 400°F and prepare a large baking sheet lined with parchment paper.
  • Place chickpeas, peppers, onion, and zucchini in a single layer on the baking sheet.
  • Drizzle with olive oil and season with chili powder, cumin, garlic powder, paprika, oregano, salt, and pepper.
  • Toss everything until evenly coated with spices and oil.
  • Roast in the oven for 12 to 14 minutes until veggies are blistered.
  • (Optional) Turn on the broiler for an additional 1 to 3 minutes for extra char.
  • Assemble fajitas in tortillas and add your favorite toppings.

Notes

Don’t overcrowd the baking sheet for even roasting.
Broiling helps to achieve a desired char; watch carefully to avoid burning.
