Description

Ingredients

  • 1 cup espresso
  • 1/2 cup brown sugar
  • 1 cup white chocolate
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1 tablespoon gelatin
  • 1 cup mascarpone
  • 1/2 cup molasses
  • 1 egg
  • 2 teaspoons ginger
  • glazing ingredients

Instructions

  • Start by blooming the gelatin in a small bowl of cold water.
  • In a saucepan, combine warm espresso and brown sugar, stirring until dissolved.
  • Add white chocolate, cinnamon, cloves, and nutmeg to the saucepan, stirring until smooth. Allow cooling slightly.
  • In a mixing bowl, beat mascarpone and heavy cream together until soft peaks form.
  • Fold the cooled mousse base into the whipped cream mixture until smooth and fluffy.
  • In a separate bowl, mix flour, ground ginger, and a pinch of salt. Stir in molasses and egg yolk until a soft dough forms.
  • Roll the dough out to 1/4-inch thick and cut out circles for the cookie base.
  • Grease silicone dome molds and fill with mousse mixture, leaving space at the top. Press cookie rounds into the mousse until just submerged.
  • Cover with plastic wrap and freeze overnight.
  • Once frozen, heat glazing ingredients until warm (about 90°F).
  • Remove mousse domes from molds and place on a wire rack over a baking sheet. Pour warm glaze over the domes.
  • Transfer the glazed domes to a serving plate and decorate as desired.

Notes

Consider using flavored espresso for added depth.
For a richer flavor, let the mousse chill for an extra hour after assembling.
