- 1 cup espresso
- 1/2 cup brown sugar
- 1 cup white chocolate
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1 tablespoon gelatin
- 1 cup mascarpone
- 1/2 cup molasses
- 1 egg
- 2 teaspoons ginger

Instructions
- Start by blooming the gelatin in a small bowl of cold water.
- In a saucepan, combine warm espresso and brown sugar, stirring until dissolved.
- Add white chocolate, cinnamon, cloves, and nutmeg to the saucepan, stirring until smooth. Allow cooling slightly.
- In a mixing bowl, beat mascarpone and heavy cream together until soft peaks form.
- Fold the cooled mousse base into the whipped cream mixture until smooth and fluffy.
- In a separate bowl, mix flour, ground ginger, and a pinch of salt. Stir in molasses and egg yolk until a soft dough forms.
- Roll the dough out to 1/4-inch thick and cut out circles for the cookie base.
- Grease silicone dome molds and fill with mousse mixture, leaving space at the top. Press cookie rounds into the mousse until just submerged.
- Cover with plastic wrap and freeze overnight.
- Once frozen, heat glazing ingredients until warm (about 90°F).
- Remove mousse domes from molds and place on a wire rack over a baking sheet. Pour warm glaze over the domes.
- Transfer the glazed domes to a serving plate and decorate as desired.
Notes
Consider using flavored espresso for added depth.
For a richer flavor, let the mousse chill for an extra hour after assembling.
