These Valentine Homemade Blueberry Bagels are deliciously unique with fresh blueberries and dried fruit. Simple to make, they are perfect for breakfast or a snack, offering a delightful blend of flavors. Enjoy them toasted with your favorite toppings for a tasty treat!

- 1 and 1/2 cups (about 200g) fresh or frozen blueberries
- 1/4 cup (50g) granulated sugar, divided
- 1 cup (240g/ml) warm water (between 100–110°f/38–43°c)
- 1 tablespoon instant or active dry yeast
- 1 teaspoon pure vanilla extract
- 3/4 cup (120g) dried blueberries
- 3 and 3/4 cups (488g) bread flour (spooned & leveled), plus more as needed
- 2 teaspoons salt
- nonstick spray or 2 teaspoons butter or olive oil for coating the bowl
- 2 quarts (1.9l) water
- 1/4 cup (85g) honey or barley malt syrup
- 1 egg white beaten with 1 tablespoon water for egg wash
Instructions
- In a small saucepan over medium-low heat, combine blueberries and half of the sugar. Cook until you have a sauce, about 10 minutes, then cool.
- In a stand mixer, whisk warm water, remaining sugar, and yeast. Let it sit for 5-10 minutes until foamy.
- Add 1/2 cup of the cooled blueberry sauce, vanilla extract, dried blueberries, 1 cup of bread flour, and salt. Mix until combined, then add remaining flour and beat until dough pulls away from the bowl's sides.
- Knead the dough by hand or with a dough hook for 6–8 minutes until smooth and elastic.
- Grease a bowl and place the dough in it, covering with plastic wrap. Let rise at room temperature for 2 hours or until doubled in size.
- Prepare two baking sheets with parchment paper or silicone mats.
- Punch down the risen dough, divide into 8 pieces, and shape each into a bagel. Let them rest for 5–10 minutes.
- Preheat the oven to 425°F (218°C).
- In a pot, bring water and honey to a boil. Boil bagels, flipping after 1 minute, then drain and place on baking sheets.
- Brush bagels with egg wash before baking for 26–30 minutes until lightly browned. Cool before serving.
Notes
These bagels are best enjoyed fresh but can be stored at room temperature for 2 days or refrigerated for 5 days.
To freeze, wrap tightly and store for up to 3 months.
Feel free to customize toppings such as cream cheese or butter.
