Description

This Valentine Easy Spicy Cucumber Salad is a vibrant blend of Persian cucumbers, spicy garlic, and tangy soy sauce. It’s perfect as a quick side or a refreshing snack, offering a delightful crunch and a burst of flavor with each bite.


Ingredients

  • 1 pound Persian cucumbers
  • 2 teaspoons kosher salt
  • 2 garlic cloves, thinly sliced
  • 1 teaspoon chili oil
  • 1 teaspoon toasted sesame oil
  • 2 teaspoons soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 teaspoon unseasoned rice vinegar
  • 1 teaspoon granulated sugar
  • 24 tablespoons warm water
  • Optional garnish: Red Fresno pepper slices
  • Optional garnish: Toasted sesame seeds

Instructions

  • Slice cucumbers into ¾-inch thick pieces.
  • Sprinkle sliced cucumbers with kosher salt and let them sweat for 30 minutes to 2 hours.
  • Mix garlic with chili oil and toasted sesame oil to create a flavorful oil.
  • Whisk soy sauce, rice vinegar, sugar, and warm water into the garlic oil until the sugar dissolves.
  • Rinse salted cucumbers under cold water and pat dry.
  • Toss cucumbers with the sauce in a large bowl.
  • Garnish with sliced garlic, red Fresno pepper, and sesame seeds.

Notes

Rinse cucumbers thoroughly after salting to avoid excess saltiness.
