- 1 teaspoon active dry yeast
- 3 cups bread flour or all-purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- ¾ cup dried cranberries
- ½–¾ cup raisins
- ½ cup chopped walnuts
Instructions
- Mix room-temperature water and honey; sprinkle yeast on top and let sit for 5-10 minutes until foamy.
- Combine flour, salt, and ground cinnamon in a bowl; whisk evenly.
- Mix the dry ingredients into the yeast mixture until just combined into a shaggy dough.
- Cover and let rise at room temperature for 8-10 hours or overnight.
- Shape the risen dough into a round loaf and place on a parchment-lined baking sheet; refrigerate overnight.
- Preheat the Dutch oven to 450°F (232°C) and let dough come to room temperature for 30 minutes.
- Score the top of the dough, bake covered for 30 minutes, then uncovered for an additional 15-20 minutes until golden brown.
- Cool on a wire rack for 30 minutes before slicing.
Notes
Store bread at room temperature in a bread box or paper bag for up to 3 days.
To refresh frozen slices, toast or warm in the oven at 350°F (175°C) for 5-10 minutes.
