  • Yellow onion (1 medium, diced)
  • Carrots (2 large, diced)
  • Celery (4 ribs, diced)
  • Garlic (2 teaspoons, minced)
  • Kosher salt (½ teaspoon)
  • Ground pepper (½ teaspoon)
  • All-purpose flour (¼ cup)
  • Turkey or chicken broth (6 cups)
  • Wild rice (1 cup, uncooked, rinsed, drained)
  • Cooked turkey (3 cups, chopped into bite-sized pieces)
  • Heavy whipping cream (1 cup)
  • Parsley
  • Salt and pepper

Instructions

  • Melt butter in a large pot over medium heat.
  • Add diced onion, carrots, and celery; sauté until softened.
  • Stir in minced garlic, kosher salt, and ground pepper.
  • Sprinkle flour over vegetables; stir for 2 minutes.
  • Gradually add turkey broth, then bring to a simmer.
  • Stir in wild rice and simmer on low for 40-50 minutes.
  • Add cooked turkey and heavy cream; cook for an additional 10-15 minutes.
