Ingredients

  • All-Purpose Flour (1 2/3 cups)
  • Confectioners' Sugar (3/4 cup total)
  • Espresso Powder (1 tablespoon)
  • Baking Soda (1/2 teaspoon)
  • Baking Powder (1/2 teaspoon)
  • Salt (1/2 teaspoon)
  • White Sugar (1/2 cup)
  • Unsalted Butter (1/2 cup, softened)
  • Large Egg (1, room temperature)
  • Vanilla Extract (1 tablespoon & 1 teaspoon)
  • Mascarpone Cheese (8 ounces)
  • Heavy Cream (1/2 cup)
  • Cocoa Powder (1 tablespoon, for dusting)

Instructions

  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • In a bowl, whisk together flour, 1/3 cup confectioners' sugar, espresso powder, baking soda, baking powder, and salt.
  • In another bowl, beat the white sugar and softened butter until light and fluffy, then add egg and vanilla.
  • Fold the dry ingredients into the wet ingredients until combined.
  • Scoop dough onto baking sheets, leaving space between each cookie.
  • Bake for 13-14 minutes until edges are golden and centers are soft.
  • Cool cookies on the baking sheet for 5 minutes before transferring to wire racks.
  • Beat together mascarpone cheese, heavy cream, 3/4 cup confectioners' sugar, and 1 teaspoon vanilla until stiff peaks form.
  • Pipe mascarpone topping onto cooled cookies and dust with cocoa powder.

Notes

Store cookies in an airtight container at room temperature for up to 3 days; refrigerate for up to one week.
Cookies can be frozen for up to three months; thaw before serving.
Experiment by adding chocolate chips to the dough for extra indulgence.
