Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.

- In another bowl, beat the white sugar and softened butter until light and fluffy, then add egg and vanilla.

- Beat together mascarpone cheese, heavy cream, 3/4 cup confectioners' sugar, and 1 teaspoon vanilla until stiff peaks form.
- Pipe mascarpone topping onto cooled cookies and dust with cocoa powder.
