Description

This Sweet Potato Pasta combines creamy roasted sweet potatoes and savory cheese for a delightful meal. It’s quick to make, rich in flavor, and perfect for cozy dinners or gatherings.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium-sized onion, diced
  • 1 large garlic clove, minced
  • 1 teaspoon smoked paprika
  • 1 lb sweet potatoes, peeled and diced
  • ½ lb good-quality pasta
  • Approx. 3 to 4 cups water
  • 1 teaspoon salt, or to taste
  • 1 teaspoon thyme leaves
  • ¼ cup cream cheese
  • ¼ cup parmesan cheese, grated
  • Freshly ground black pepper, to serve

Instructions

  • Heat olive oil over medium heat in a pot.
  • Sauté diced onion for 5 minutes until translucent, then add garlic and smoked paprika.
  • Add diced sweet potatoes and pasta, stirring to combine.
  • Pour in enough water to cover, and add salt and thyme.
  • Bring to a boil, then reduce to a simmer until pasta is al dente.
  • Stir in cream cheese and parmesan until creamy and flavorful.
  • Serve hot with freshly ground black pepper.

Notes

To store, cool and transfer to an airtight container; lasts 3 days in the fridge.
For a vegan option, replace the cream cheese and parmesan with plant-based alternatives.
Be cautious not to overcook the pasta to maintain a firm texture.
