- 1 tablespoon olive oil
- 1 medium-sized onion, diced
- 1 large garlic clove, minced
- 1 teaspoon smoked paprika
- 1 lb sweet potatoes, peeled and diced
- ½ lb good-quality pasta
- Approx. 3 to 4 cups water
- 1 teaspoon salt, or to taste
- 1 teaspoon thyme leaves
- ¼ cup cream cheese
- ¼ cup parmesan cheese, grated
- Freshly ground black pepper, to serve
Instructions
- Heat olive oil over medium heat in a pot.
- Sauté diced onion for 5 minutes until translucent, then add garlic and smoked paprika.
- Add diced sweet potatoes and pasta, stirring to combine.
- Pour in enough water to cover, and add salt and thyme.
- Bring to a boil, then reduce to a simmer until pasta is al dente.
- Stir in cream cheese and parmesan until creamy and flavorful.
- Serve hot with freshly ground black pepper.
Notes
To store, cool and transfer to an airtight container; lasts 3 days in the fridge.
For a vegan option, replace the cream cheese and parmesan with plant-based alternatives.
Be cautious not to overcook the pasta to maintain a firm texture.
