These Strawberry Cake Truffles are a delightful treat combining moist strawberry cake and creamy textures. Ideal for parties or a sweet escape anytime!
Ingredients
- Strawberry Cake Mix (15.25 oz)
- Cream Cheese (8 oz)
- Cream Cheese Chips (⅓ cup)
- Ghirardelli Vanilla Melting Wafers (2 x 10 oz bags)
- Wilton Pink Candy Melts (½ cup each of two shades)
- Sprinkles (optional)
Instructions
- Preheat oven to 350°F and prepare a baking sheet with parchment paper.
- Bake strawberry cake mix for 5 minutes to heat-treat it, then cool.
- In a medium bowl, mix softened cream cheese until creamy.
- Fold cooled cake mix into cream cheese until combined.
- Gently mix in cream cheese chips.
- Chill dough covered in plastic wrap for 2 hours.
- Scoop chilled dough into balls and let rest for 15 minutes on parchment sheets.
- Melt vanilla wafers using a double boiler or microwave.
- Dip each dough ball in melting wafers and place back on baking sheet.
- Add sprinkles and drizzle with melted pink candy melts before setting.
- Allow to set completely before serving.
Notes
Keep the cream cheese at room temperature for easy mixing.
Avoid over-mixing to keep the truffles light and fluffy.
Store any leftovers in an airtight container for up to a week.
