- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 ½ cups frozen chopped spinach, thawed and drained
- ½ cup fresh parsley, finely chopped
- ½ cup feta cheese, crumbled
- ¼ cup Parmesan cheese, grated
- 2 large eggs, divided (one for egg wash)
- ½ teaspoon salt (or to taste)
- ¼ teaspoon ground black pepper (or to taste)
- 1 (10×15-inch) sheet puff pastry, thawed if frozen
Instructions
- Preheat the oven to 375°F and grease a muffin pan.
- Thaw and drain spinach, squeezing out excess moisture.
- Sauté onions and garlic in melted butter until translucent.
- Stir in spinach and cook until moisture evaporates; cool.
- Combine spinach mixture with parsley, feta, parmesan, one egg, salt, and pepper.
- Chill filling for 10 minutes.
- Cut puff pastry into 12 rectangles.
- Place each rectangle in muffin cups and fill with 2 tablespoons of mixture.
- Fold corners of pastry to center and pinch to seal; brush with egg wash.
- Bake for 25-30 minutes until golden brown; cool slightly before serving.
Notes
Squeeze out as much water as possible from the spinach to avoid sogginess.
Use cold puff pastry for easier handling; can freeze before baking for later use.
