- ¾ cup fresh or frozen spinach (5 oz)
- ½ cup ricotta cheese (5 oz)
- ⅓ cup grated parmesan cheese
- ¼ teaspoon grated fresh garlic
- 2 tablespoons breadcrumbs
- ¾ teaspoon salt
- ⅛ teaspoon black pepper
- 1 sheet puff pastry (9×13-inch)
- 1 beaten egg
- 1 tablespoon poppy or sesame seeds
Instructions
- Thaw and prepare spinach by thawing frozen or blanching fresh spinach, then drain and chop.
- Combine ingredients in a bowl: mix chopped spinach with ricotta, parmesan, garlic, breadcrumbs, salt, and pepper until blended.
- Roll out the puff pastry; cut the sheet in half to create two rectangles.
- Divide the filling between the rectangles and roll each into a log. Wrap and freeze for 1 hour.
- Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Slice each log into 1.3-inch thick pieces and place them on the baking sheet. Brush with beaten egg and sprinkle seeds on top.
- Bake for 25 minutes until golden and crisp.
Notes
Squeeze excess moisture from spinach to prevent a soggy filling.
Ensure the puff pastry remains cold for a flaky texture during baking.
You can freeze unbaked logs for up to 3 months for easy last-minute appetizers.
