- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 and 1/2 teaspoons ground ginger
- 1 and 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 2/3 cup unsulphured or dark molasses
- 3/4 cup hot water
- 1/2 cup unsalted butter, softened
- 1/3 cup light or dark brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup confectioners’ sugar
- 2–3 tablespoons orange juice
Instructions
- Preheat the oven to 350°F (177°C) and grease a loaf pan.
- Whisk together dry ingredients in a medium bowl and set aside.
- In another bowl, mix molasses and hot water until smooth.
- Cream together butter and brown sugar until smooth, then add egg and vanilla extract.
- Gradually add dry ingredients alternating with the molasses mixture until combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
- Let cool in the pan for 10-15 minutes, then drizzle with glaze made from confectioners' sugar and orange juice.
Notes
Wrap tightly to store at room temperature for up to three days.
Can be customized with nuts or chocolate chips for extra flavor.
For deeper flavor, use dark brown sugar instead of light.
