  • 1 ½ teaspoons salt
  • ¾ teaspoon black pepper
  • 23 Tablespoons olive oil
  • 45 onions (sliced)
  • 4 cloves garlic (minced)
  • 2 cups beef broth
  • 1 cup dry red wine
  • 1-ounce packet beefy onion soup mix
  • 3 Tablespoons cornstarch
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons minced thyme leaves
  • 2 bay leaves
  • Fresh herbs (for topping)

Instructions

  • Pat and Season the chuck roast with salt and pepper.
  • Sear the roast in olive oil on both sides.
  • Layer sliced onions and minced garlic over the roast.
  • Whisk together broth, red wine, soup mix, cornstarch, Worcestershire sauce, and thyme; pour over roast.
  • Cover and cook on low for 8-10 hours until tender.
  • Shred the meat and return to the pot; top with fresh herbs.

Notes
