These Slow Cooker Colcannon Potatoes pack the perfect blend of flavor and comfort. With wholesome ingredients like russet potatoes, cabbage, and crispy bacon, this dish is simple to prepare and ideal for a cozy dinner at home.


Ingredients

  • 2.5 lbs. russet potatoes (peeled and diced)
  • 1/2 head cabbage (rough chopped)
  • 4 chicken bouillon cubes
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • water to cover
  • 1/2 cup half and half (or milk) plus more if needed
  • 1/2 cup salted butter, melted
  • 3/4 tsp. salt
  • ¼ tsp. pepper
  • 8 slices bacon, cooked and crumbled
  • 1/2 cup sliced green onion

Instructions

  1. Combine peeled potatoes and chopped cabbage in the slow cooker.
  2. Add chicken bouillon cubes, garlic powder, and onion powder.
  3. Pour enough water to cover the potatoes and most of the cabbage without overflowing.
  4. Cover the slow cooker with its lid and cook on HIGH for 4.5 hours.
  5. Once cooking is complete, drain excess water from the potatoes and cabbage.
  6. Add melted butter, half-and-half, salt, and pepper to the mixture.
  7. Mash the potatoes with a masher, adjusting the half-and-half for consistency as needed.
  8. Gently mix in cooked bacon and green onions before serving.

Notes

Adjust the amount of half-and-half according to desired creaminess.
Bacon can be substituted with a vegetarian option for a different flavor profile.
Ensure not to overfill the slow cooker to prevent spilling during cooking.
