- 1 pound kielbasa or smoked sausage
- 1 pound red potatoes
- 1 red bell pepper
- 1/2 head small green cabbage
- 2–3 tablespoons olive oil
- salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon italian seasonings
Instructions
- Preheat the oven to 425°F (220°C).
- Line a large rimmed baking sheet with heavy-duty foil. Spread the sliced sausage, potatoes, bell peppers, and chopped cabbage evenly over the foil.
- Drizzle olive oil over the mixture, then season with salt, pepper, garlic powder, and Italian seasonings. Toss gently to combine.
- Place the baking sheet in the oven and bake uncovered for 25-30 minutes, or until the potatoes are tender and everything is golden brown. Serve hot.
Notes
You can substitute any pre-cooked sausage for kielbasa if preferred.
