Ingredients

  • 1 pound kielbasa or smoked sausage
  • 1 pound red potatoes
  • 1 red bell pepper
  • 1/2 head small green cabbage
  • 23 tablespoons olive oil
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon italian seasonings

Instructions

  • Preheat the oven to 425°F (220°C).
  • Line a large rimmed baking sheet with heavy-duty foil. Spread the sliced sausage, potatoes, bell peppers, and chopped cabbage evenly over the foil.
  • Drizzle olive oil over the mixture, then season with salt, pepper, garlic powder, and Italian seasonings. Toss gently to combine.
  • Place the baking sheet in the oven and bake uncovered for 25-30 minutes, or until the potatoes are tender and everything is golden brown. Serve hot.

Notes

You can substitute any pre-cooked sausage for kielbasa if preferred.
