- 1/2 yellow onion (thinly sliced)
- 2 cups bell peppers (thin strips)
- 2 zucchini (chopped)
- 4 smoked sausages (sliced)
- 3 Tbsp olive oil
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1 tsp black pepper (or to taste)
- Grated parmesan (optional)
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- In a bowl, toss together gnocchi, onion, bell peppers, and zucchini.
- Add sliced smoked sausages and spread evenly on the baking sheet.
- Drizzle with olive oil and sprinkle with Italian seasoning, salt, and pepper; toss to coat.
- Roast for 25 minutes, stirring halfway through until golden.
- Sprinkle with parmesan if desired, and serve warm.
Notes
Leftovers can be stored in an airtight container in the fridge for up to three days.
