This Sausage and Potato Sheet Pan Dinner is packed with flavor and simplicity. Featuring juicy sausage, tender potatoes, and fresh green beans, it’s perfect for a quick and satisfying meal that’s sure to please everyone at the table.

  • 1 lb smoked sausage beef or pork, sliced into rounds
  • 1 lb baby potatoes halved (or quartered if large)
  • 12 oz fresh green beans trimmed
  • 3 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • salt and pepper to taste
  • optional: ¼ teaspoon red pepper flakes for heat
  • optional garnish: fresh parsley or grated parmesan

Instructions

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil for easy cleanup.
  • In a large bowl, combine the halved potatoes, green beans, and sliced sausage. Toss with olive oil, garlic powder, onion powder, paprika, parsley, salt, pepper, and red pepper flakes if desired.
  • Spread the mixture evenly across the prepared baking sheet. Ensure everything is in a single layer for even roasting.
  • Roast in the oven for 30–35 minutes, flipping halfway through, until the potatoes are tender and golden, and the green beans are slightly crispy.
  • Serve hot, garnished with chopped parsley or a sprinkle of Parmesan if desired.

Notes

For crispy green beans, make sure they are not overcrowded on the baking sheet.
Feel free to use any smoked sausage you prefer; chicken sausage or turkey sausage works well too.
You can customize the vegetables according to your preference or what you have on hand.
