- 1 lb smoked sausage beef or pork, sliced into rounds
- 1 lb baby potatoes halved (or quartered if large)
- 12 oz fresh green beans trimmed
- 3 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried parsley
- salt and pepper to taste
- optional: ¼ teaspoon red pepper flakes for heat
- optional garnish: fresh parsley or grated parmesan
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil for easy cleanup.
- In a large bowl, combine the halved potatoes, green beans, and sliced sausage. Toss with olive oil, garlic powder, onion powder, paprika, parsley, salt, pepper, and red pepper flakes if desired.
- Spread the mixture evenly across the prepared baking sheet. Ensure everything is in a single layer for even roasting.
- Roast in the oven for 30–35 minutes, flipping halfway through, until the potatoes are tender and golden, and the green beans are slightly crispy.
- Serve hot, garnished with chopped parsley or a sprinkle of Parmesan if desired.
Notes
For crispy green beans, make sure they are not overcrowded on the baking sheet.
Feel free to use any smoked sausage you prefer; chicken sausage or turkey sausage works well too.
