Description

Santa Fe Chicken is a burst of flavors in one dish, featuring chicken, black beans, corn, and melted cheese. Perfect for quick dinners or meal prep!


Ingredients

  • 2 large chicken breasts, cut in half lengthwise
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 can Ro-tel diced tomatoes and green chilies
  • 1 can black beans, drained
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon smoked paprika
  • 1 cup Mexican cheese blend
  • Fresh cilantro, chopped for garnish

Instructions

  • Preheat oven to 400°F.
  • Season chicken pieces with garlic powder, chili powder, salt, and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear chicken for 3-4 minutes on each side until golden.
  • Remove chicken and sauté onions until golden.
  • Mix in Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through.
  • Layer chicken on top, spooning the mixture over it, then top with cheese.
  • Bake for 5-7 minutes until cheese is melted and chicken is cooked through.
  • Garnish with fresh cilantro and serve.

Notes

For a richer flavor, consider using chicken thighs instead of breasts.
You can adjust the spice level by adding fresh jalapeños or using hot chili powder.
