- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 can Ro-tel diced tomatoes and green chilies
- 1 can black beans, drained
- 1 cup corn (fresh or frozen)
- 1 teaspoon smoked paprika
- 1 cup Mexican cheese blend
- Fresh cilantro, chopped for garnish
Instructions
- Preheat oven to 400°F.
- Season chicken pieces with garlic powder, chili powder, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear chicken for 3-4 minutes on each side until golden.
- Remove chicken and sauté onions until golden.
- Mix in Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through.
- Layer chicken on top, spooning the mixture over it, then top with cheese.
- Bake for 5-7 minutes until cheese is melted and chicken is cooked through.
- Garnish with fresh cilantro and serve.
Notes
For a richer flavor, consider using chicken thighs instead of breasts.
You can adjust the spice level by adding fresh jalapeños or using hot chili powder.
