Ingredients

Scale
  • 2 pounds beef sirloin
  • 1 pound baby potatoes
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a bowl, combine garlic, olive oil, salt, pepper, thyme, and rosemary.
  • Rub the garlic mixture onto the beef sirloin.
  • Place the beef in a roasting pan surrounded by baby potatoes.
  • Roast for about 1 hour, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  • Allow the beef to rest for 10 minutes before slicing.
  • Serve the beef with the roasted garlic potatoes.

Notes

Ensure the beef is at room temperature before cooking for even doneness.
Use a meat thermometer to avoid overcooking the beef.
Leftovers can be stored in the fridge for up to 3 days.
