- 125g / 4.5 oz dark cooking chocolate , bittersweet / 70% cocoa
- 10g / 0.3 oz unsalted butter
- 1/2 cup cream , full fat
- 3 tbsp caster sugar (superfine white sugar)

Instructions
- Work at a steady pace to keep whipped egg whites and cream cool during preparation.
- Separate the eggs into whites and yolks while they are cold. Place the whites in a large bowl and the yolks in a small bowl. Let the whites sit as you prepare the other ingredients.
- Whisk the yolks until uniform in consistency.
- Melt the chocolate and butter by breaking the chocolate into pieces and placing it in a microwave-safe bowl with the butter. Heat in 30-second intervals, stirring between each, until smooth. Set aside to cool slightly.
- Beat the cream until stiff peaks form, taking care not to over-whip.
- Add sugar to the whipped egg whites and beat until firm peaks form.
Notes
Ensure the egg whites are at room temperature for the best volume when whipping.
