- 1/3 cup creamy peanut butter
- 1 cup chocolate almond milk

- 2 1/2 tsp vanilla extract
- 3 cups rolled oats
- 1/2 cup cocoa powder
- mini-vegan chocolate chips
Instructions
- Preheat the oven to 350 degrees and spray a 9 x 13 pan with non-stick spray.
- Mash enough over ripe bananas to yield 2 2/3 cups.
- In a bowl, combine the mashed bananas, peanut butter, chocolate almond milk, maple syrup, and vanilla extract.
- Mix the ingredients until smooth.
- Stir in the rolled oats and cocoa powder until fully incorporated.
- Pour the mixture into the prepared pan and spread it evenly.
- Sprinkle the top with mini vegan chocolate chips as desired.
- Bake in the preheated oven for 30 minutes, then turn off the oven, leaving the pan inside for an extra 20 minutes. After this time, remove from the oven and let it cool.
- Optional: Drizzle melted creamy peanut butter over the cooled baked oatmeal for extra flavor.
