- 1 lb potatoes (diced)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 2 tsp paprika
- ¼ tsp dried thyme
- 1 tsp dried oregano
- ½ tsp cumin
- Salt & black pepper (to taste)
- 2 tbsp butter
- 1 cup water or beef broth
- Fresh parsley or green onions (for garnish)
Instructions
- Heat a large skillet over medium-high heat, melt half the butter, and brown the ground beef for 8-10 minutes.
- Season the browned beef with salt, pepper, and spices; set aside.
- Sauté the diced onion in the same skillet for about 5 minutes until softened, then add minced garlic for 1 minute.
- Add the diced potatoes to the skillet, cooking for 5-6 minutes until they are golden.
- Pour in water or beef broth, scraping flavorful bits from the bottom; simmer for 10-12 minutes until potatoes are fork-tender.
- Return the beef to the skillet, stir to combine, and heat for an additional 4 minutes.
- Garnish with parsley or green onions before serving.
Notes
Ground turkey or chicken can be used as a meat alternative.
