Description

Ingredients

  • 1 cup pitted sour cherries
  • ½ cup bourbon
  • 1 tablespoon brown sugar
  • 8 oz semi-sweet chocolate, finely chopped
  • ⅓ cup heavy cream
  • 1 tablespoon unsalted butter
  • ½ cup bourbon-soaked cherries, finely chopped and well-drained
  • 12 oz dark chocolate or chocolate melting wafers
  • Optional Garnish: Crushed freeze-dried cherries and flaky sea salt

Instructions

  • Soak the cherries in bourbon and brown sugar for at least 2 hours.
  • Make ganache by heating cream, pouring it over chopped chocolate, and mixing in butter until smooth.
  • Add chopped cherries to the ganache and refrigerate until firm.
  • Scoop ganache into balls and chill again.
  • Roll the balls smooth and dip in melted chocolate.
  • Garnish with freeze-dried cherries or sea salt before setting.
