This Marry Me Chicken Soup is a delightful blend of sun-dried tomatoes, creamy broth, and tender chicken, perfect for cozy dinners or quick meals.
Ingredients
- cup Sun-dried tomatoes (75 g), drained and chopped
- tbsp Oil from sun-dried tomato jar (30 mL)
- medium Yellow onion (about 1 cup/150 g), diced
- cloves Garlic, minced
- tbsp Tomato paste (30 g)
- cups Chicken broth (1.4 L)
- cup Heavy whipping cream (240 mL)
- cup Fresh basil (10 g), chopped
- tsp Kosher salt, to taste
- tsp Italian seasoning
- tsp Garlic powder
- tsp Crushed red pepper flakes
- oz Medium shell pasta (uncooked) (225 g, about 2 cups)
- cups Fresh baby spinach (90 g)
- cups Rotisserie chicken (about 12 oz/340 g), shredded
- oz Cream cheese (113 g), softened
- cup Parmesan cheese (45 g), grated, plus more for serving
Instructions
- Heat oil in a large Dutch oven and sauté onions and garlic until fragrant.
- Add tomato paste and sun-dried tomatoes, cooking for 2 minutes.
- Pour in chicken broth and heavy cream, add spices, and bring to a gentle boil.
- Stir in uncooked medium shell pasta and cook for 12 minutes until tender.
- Add spinach, rotisserie chicken, cream cheese, and Parmesan, stirring until well combined.
- Serve with extra cheese and garnish as desired.
Notes
Store leftovers in a sealed container for up to 4 days in the refrigerator.
For freezing, keep in an airtight container for up to 3 months.
