Ingredients
- Smoked Ham (2½-3 kg / 5½-6½ lb)
- Onion
- Carrot
- Black Peppercorns (1 tsp)
- Bay Leaves (2-3)
- Bourbon (125ml / ½ cup)
- Maple Syrup (125ml / ½ cup)
- Brown Sugar (4 tbsp)
- Dijon Mustard (2 tbsp)
- Apple Cider Vinegar (2 tsp)
Instructions
- Prepare the Ham by simmering with onion, carrot, bay leaves, and peppercorns for about 1 hour and 15 minutes.
- Make the Glaze by combining bourbon, maple syrup, brown sugar, Dijon mustard, and apple cider vinegar in a saucepan, simmering until thickened.
- Preheat oven to 400°F. Score the fat of the ham in a diamond pattern and brush half the glaze over it.
- Roast the Ham for 15 minutes, apply the remaining glaze, and roast for another 10 minutes until caramelized.
- Rest the ham for at least 10 minutes before slicing and serving.
Notes
Let the ham cool before storing in an airtight container.
For juicier slices, marinate the ham in glaze overnight before cooking.
