  • Chicken Breast/Thighs
  • White Onion
  • Carrots
  • Garlic
  • Frozen Peas
  • Cooked Rice
  • Unsalted Butter
  • Toasted Sesame Oil
  • Eggs
  • Mango
  • Olive Oil
  • Freshly Cracked Black Pepper

Instructions

  • Whisk together soy sauce, water, and brown sugar for the marinade.
  • Marinate diced chicken in the mixture while prepping other ingredients.
  • Heat olive oil in a pan, cook chicken until golden brown.
  • Add minced garlic and butter to the pan, then remove chicken to keep warm.
  • Sauté onion, carrots, and garlic until onions are translucent.
  • Add frozen peas, seasoning with black pepper, and cook until warmed through.
  • Increase heat, add butter, then fry the cold rice with soy sauce and sesame oil.
  • Scramble eggs in the pan, mixing them into the rice once set.
  • Gently fold in cooked chicken and diced mango, adjust seasoning, and serve.

Notes

Use day-old rice for best texture in frying.
Feel free to substitute chicken with tofu for a vegan option.
Fresh mango is ideal, but diced pineapple works as well.
