- 1/3 cup granulated sugar
- 1 large egg
- 1 and 1/2 teaspoons pure vanilla extract
- 1/2 cup jam or preserves (raspberry or apricot)
- 2 tablespoons confectioners’ sugar
Instructions
- Pulse almonds or pistachios with brown sugar in a food processor to a fine crumb and set aside.
- Whisk together flour, baking powder, ground cinnamon, and salt in a bowl.
- Beat softened butter and granulated sugar until creamy, then mix in egg and vanilla extract.
- Gradually combine the dry mixtures into the wet mixture until fully incorporated.
- Chill dough discs in plastic wrap for at least 3 hours.
- Preheat oven to 350°F (180°C) and prepare baking sheets.
- Roll out dough and cut into circles; cut holes in half for tops.
- Bake the cookies until lightly browned and cool.
- Dust tops with confectioners’ sugar; spread jam and assemble cookies.
