Ingredients

  • 2/3 cup almonds or pistachios, finely ground
  • 1/3 cup brown sugar
  • 2 and 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 and 1/2 teaspoons pure vanilla extract
  • 1/2 cup jam or preserves (raspberry or apricot)
  • 2 tablespoons confectioners’ sugar

Instructions

  • Pulse almonds or pistachios with brown sugar in a food processor to a fine crumb and set aside.
  • Whisk together flour, baking powder, ground cinnamon, and salt in a bowl.
  • Beat softened butter and granulated sugar until creamy, then mix in egg and vanilla extract.
  • Gradually combine the dry mixtures into the wet mixture until fully incorporated.
  • Chill dough discs in plastic wrap for at least 3 hours.
  • Preheat oven to 350°F (180°C) and prepare baking sheets.
  • Roll out dough and cut into circles; cut holes in half for tops.
  • Bake the cookies until lightly browned and cool.
  • Dust tops with confectioners’ sugar; spread jam and assemble cookies.

Notes

Store cookies at room temperature for up to 3 days.
Dough can be made ahead and refrigerated for 4 days or frozen for 3 months.
Use room temperature eggs and softened butter for best results.
