This Leprechaun Pistachio Fudge features a delightful blend of white chocolate, sweetened condensed milk, and Irish cream. - 3 ½ cups white chocolate chips (22–24 ounces)
- 14 ounces sweetened condensed milk
- ¼ cup irish cream
- 1 cup shelled pistachios roughly chopped
Instructions
- Line an 8-inch × 8-inch baking dish with parchment paper or foil, allowing it to overhang for easy removal later.
- In a microwave-safe bowl, heat the sweetened condensed milk for 1 minute.
- In a large glass bowl, place the white chocolate chips and pour the warm condensed milk over them. Let it sit for 1 to 2 minutes, then stir until the chocolate is completely melted. If necessary, microwave in 15-second bursts until fully melted.
- Stir in the Irish cream until well combined, taking a couple of minutes. Mix in three-quarters of the chopped pistachios until evenly distributed.
- Pour the fudge mixture into the prepared baking dish and sprinkle the remaining pistachios on top, gently pressing them into the fudge.
- Refrigerate for 3 to 4 hours until set. Once firm, remove the fudge from the dish, peel off the liner, and cut into 25 equal pieces. Store in an airtight container in the fridge.
Notes
For a creamier texture, ensure the white chocolate is melted completely with the condensed milk.
