Description

This Healthy Tomato Basil Bruschetta features a delightful mix of juicy tomatoes, fresh basil, and crunchy baguette. Perfect for parties or a light snack!


Ingredients

  • 1/2 Small Onion
  • 2 Tbsp Fresh Basil, Chopped
  • 1 Clove Garlic, Minced
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Black Pepper
  • 1/4 tsp Fine Sea Salt
  • 1 French Baguette, Sliced
  • 3 Tbsp Extra Virgin Olive Oil
  • Crumbled Feta
  • Balsamic Vinegar Glaze

Instructions

  • Preheat your oven to 400°F and prepare a baking sheet with parchment paper.
  • Dice the vine ripe tomatoes and onion into small pieces, then place them in a medium bowl, removing excess juice.
  • Add the chopped basil, minced garlic, oregano, black pepper, and salt; stir gently and let sit for a few minutes.
  • Slice the baguette diagonally into 1-inch thick pieces and brush with olive oil.
  • Arrange baguette slices on the baking sheet and bake for 8 minutes, flipping halfway until golden.
  • Drain excess liquid from the tomato mixture, spoon onto toasted slices, and drizzle with balsamic glaze, topping with feta.

Notes

For a gluten-free option, substitute a gluten-free bread of your choice.
Let the tomato mixture marinate for at least 15 minutes for enhanced flavor.
