Description

This Healthy Pesto Sausage Gnocchi Bake offers a wonderful harmony of flavors with creamy sauce, savory Italian sausage, and fresh spinach. Perfect for a quick dinner or cozy gatherings, it’s comfort food that’s both hearty and healthy!


Ingredients

  • 11 ounces Italian sausage
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup heavy/whipping cream
  • 3 tablespoons pesto
  • 1 pound uncooked potato gnocchi
  • 2 cups packed fresh baby spinach
  • 1.5 cups shredded mozzarella cheese
  • Freshly grated parmesan cheese (optional)
  • Chopped fresh parsley (optional)
  • Salt & pepper (to taste)

Instructions

  • Preheat the oven to 375°F and choose a deep oven-safe skillet.
  • Crumble the sausage into the skillet over medium-high heat; cook until browned (about 5 minutes).
  • Add chopped onion; cook until softened (about 5 minutes). Drain excess fat.
  • Stir in minced garlic and white wine; cook for 30 seconds until fragrant.
  • Incorporate heavy cream and pesto; mix until smooth and creamy.
  • Fold in uncooked gnocchi; heat through for about 1-2 minutes.
  • Add fresh spinach off the heat; stir until wilted, then top with mozzarella cheese.
  • Bake uncovered for 15 minutes, then broil for a few minutes for a crispy top.
  • Allow to rest for 5 minutes before serving.

Notes

For gluten-free, use gluten-free gnocchi.
Store leftovers in an airtight container for up to 3 days in the fridge.
Reheat at 350°F for 15-20 minutes to restore texture.
