- 11 ounces Italian sausage
- 1/2 medium onion, chopped
- 3 cloves garlic, minced
- 1/2 cup dry white wine
- 1 cup heavy/whipping cream
- 3 tablespoons pesto
- 1 pound uncooked potato gnocchi
- 2 cups packed fresh baby spinach
- 1.5 cups shredded mozzarella cheese
- Freshly grated parmesan cheese (optional)
- Chopped fresh parsley (optional)
- Salt & pepper (to taste)
Instructions
- Preheat the oven to 375°F and choose a deep oven-safe skillet.
- Crumble the sausage into the skillet over medium-high heat; cook until browned (about 5 minutes).
- Add chopped onion; cook until softened (about 5 minutes). Drain excess fat.
- Stir in minced garlic and white wine; cook for 30 seconds until fragrant.
- Incorporate heavy cream and pesto; mix until smooth and creamy.
- Fold in uncooked gnocchi; heat through for about 1-2 minutes.
- Add fresh spinach off the heat; stir until wilted, then top with mozzarella cheese.
- Bake uncovered for 15 minutes, then broil for a few minutes for a crispy top.
- Allow to rest for 5 minutes before serving.
Notes
For gluten-free, use gluten-free gnocchi.
Store leftovers in an airtight container for up to 3 days in the fridge.
Reheat at 350°F for 15-20 minutes to restore texture.
