Description

This Healthy Crockpot Tater Tot Casserole features seasoned beef, gooey cheese, and crispy tater tots, making it a perfect dish for family gatherings or busy weeknights. Quick to prepare and packed with flavor, this comfort food is sure to delight everyone!


Ingredients

  • 32 ounces frozen tater tots
  • 1 pound ground beef (browned and drained)
  • 2 cups shredded cheddar cheese (divided)
  • 10.5 ounces cheese sauce
  • 1 tablespoon taco seasoning
  • ½ tablespoon minced onion
  • Freshly chopped cilantro (optional garnish)

Instructions

  • Prepare the crockpot with nonstick cooking spray.
  • Layer half of the frozen tater tots at the bottom of the crockpot.
  • Mix browned beef with cheese sauce, taco seasoning, minced onion, and half of the cheddar cheese.
  • Spread the beef mixture over the tater tots evenly.
  • Top with the remaining tater tots in a single layer.
  • Sprinkle the remaining cheddar cheese on top.
  • Cover and cook on HIGH for 2½ hours until bubbly and melted.

Notes

For added spice, consider including jalapeños or red pepper flakes in the beef mixture.
You can prepare the beef mixture and tots the night before and store separately for easy cooking.
Fresh tater tots may not crisp as well; frozen is recommended.
