Description

This Healthy Cheesy Ground Beef Rice Casserole combines flavorful lean beef, creamy cheese, and fluffy rice for a quick, satisfying meal perfect for family dinners.


Ingredients

  • 1 lb lean ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 cups cooked white rice
  • 10.5 oz cream of mushroom soup (1 can)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon paprika
  • Salt and pepper (to taste)
  • Chopped parsley (optional, for garnish)

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cook ground beef and onion in a skillet for 7-8 minutes until the beef is browned and onions are translucent.
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Whisk together cream of mushroom soup, milk or broth, paprika, salt, and pepper until smooth.
  • In the baking dish, combine cooked rice, beef mixture, 1 cup shredded cheese, and sauce. Mix well.
  • Top with remaining cheese, cover with foil, and bake for 20 minutes.
  • Remove foil and bake for an additional 10 minutes until cheese is bubbling and golden.
  • (Optional) Broil for 2 minutes for extra crispiness. Watch closely!
  • Let cool for 5 minutes before serving and garnish with parsley if desired.

Notes

Use leftover rice to save time.
You can substitute lean ground beef with ground turkey or chicken.
Add vegetables like bell peppers or peas for added nutrition.
