- 3 lbs frozen meatballs
- 20 oz can pineapple chunks drained with juice reserved
- 1 red bell pepper chopped
- 1 ½ cups bbq sauce
- ¼ cup brown sugar
- 3 tablespoons soy sauce
- 2 tablespoons white vinegar
- 4 garlic cloves minced
- ¼ teaspoon ginger powder
- 2 tablespoons green onions for topping
Instructions
- Place frozen meatballs, pineapple chunks, and red bell pepper in the slow cooker.
- In a bowl, combine BBQ sauce, brown sugar, vinegar, soy sauce, minced garlic, and ginger powder, then mix well.
- Pour the sauce mixture over the meatballs and cover the slow cooker.
- Cook on LOW for 4–5 hours or HIGH for 2–3 hours until meatballs are heated thoroughly and reach an internal temperature of 160°F.
- Stir the meatballs gently to coat them in sauce and garnish with sliced green onions before serving.
Notes
For extra flavor, consider adding crushed red pepper flakes for a bit of heat.
