Description

Savor the bold taste of Guinness Beef Stew, an easy to prepare dish that boasts tender beef and flavorful ingredients, perfect for a cozy dinner with family or friends.


Ingredients

  • 2 tbsp olive oil
  • 2.5 lb / 1.25 kg beef chuck, boneless short rib or any other slow cooking beef (no bone)
  • 3/4 tsp each salt and black pepper
  • 3 garlic cloves, minced
  • 2 onions, chopped (brown, white or yellow)
  • 6 oz / 180g bacon, speck or pancetta, diced
  • 3 tbsp flour (all purpose/plain)
  • 440ml / 14.9 oz guinness beer
  • 4 tbsp tomato paste
  • 3 cups (750 ml) chicken stock/broth (or beef broth)
  • 3 carrots, peeled and cut into 1.25 cm / 1/2″ thick pieces
  • 2 large celery stalks, cut into 2cm / 1″ pieces
  • 2 bay leaves
  • 3 sprigs thyme (or sub with 1 tsp dried thyme leaves)

Instructions

  • Cut the beef into 5cm/2" chunks and pat dry. Sprinkle with salt and pepper.
  • Heat oil in a heavy pot over high heat. Brown beef in batches, then remove to a plate.
  • Reduce heat to medium. Add more oil if pot appears dry.
  • Cook garlic and onion for 3 minutes until soft, then add diced bacon.
  • Continue cooking until bacon is browned, then stir in carrots and celery.
  • Add flour and stir for 1 minute to cook off the flour's raw taste.
  • Pour in Guinness, chicken broth, and mix in tomato paste. Ensure flour is dissolved, then add bay leaves and thyme.
  • Return beef to the pot, including any juices. Ensure liquid just covers the meat.
  • Cover and simmer gently for 2 hours, then uncover and simmer for another 30-45 minutes until beef is tender and sauce thickens.
  • Skim off fat if desired. Adjust seasoning and remove bay leaves and thyme before serving.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free alternative.
Serve this stew with a side of creamy mashed potatoes for the ultimate comfort meal.
Allow the stew to sit for a few hours or overnight for even richer flavors.
