Description

These Ground Turkey Egg Roll Bowls are a fantastic choice for a quick dinner. Packed with flavor from ground turkey and fresh vegetables, they make a healthy and satisfying meal that’s simple to prepare at home.


Ingredients

  • 1 tbsp olive oil
  • 3 green onions, chopped, separated whites from greens
  • 1 lb ground turkey
  • 16 oz cole slaw mix
  • 1 cup shredded carrots
  • 34 garlic cloves, minced
  • 1 inch ginger grated
  • ¼ c plus tbsp low-sodium soy sauce
  • 2 tsp sriracha
  • 12 tbsp sweet chili sauce
  • 1 tbsp toasted sesame oil
  • ⅓ cup chopped cilantro
  • ½ tsp pepper
  • ½ tsp salt, more or less to taste

Instructions

  • Heat olive oil in a large sauté pan over medium-high heat.
  • Add the chopped whites of the green onions and sauté for 1-2 minutes.
  • Add ground turkey, breaking it into smaller chunks. Sprinkle with garlic powder if desired and cook until browned.
  • In the last minute of cooking, add minced garlic and ginger, stirring to heat evenly.
  • Add the cole slaw, shredded carrots, and soy sauce, mixing to combine. Cook for 4-6 minutes until tender, stirring frequently.
  • Reduce heat to low, then mix in sriracha, sweet chili sauce, sesame oil, green onion greens, and cilantro. Toss to combine and season with salt and pepper. Adjust soy sauce for moisture as needed.
  • Serve topped with additional cilantro and sesame seeds.

Notes

For extra flavor, add a teaspoon of garlic powder while cooking the turkey.
Adjust the sriracha and sweet chili sauce according to your preferred spice level.
Serve with rice or noodles if desired for a more filling meal.
