Description

This Greek Chicken Marinade brings irresistible flavor with simple ingredients like olive oil, lemon, and garlic. It’s perfect for a quick and healthy meal.


Ingredients

  • 1/3 cup extra virgin olive oil
  • 2 lemons juiced (about 1/4 cup)
  • 1 lemon zested
  • 4 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dijon mustard optional, for emulsification
  • 1 tablespoon fresh parsley or dill chopped, optional for garnish
  • 2 pounds chicken breasts, thighs, drumsticks, or chunks

Instructions

  • Zest one lemon into a medium bowl and juice both lemons for about 1/4 cup of juice. Mince the garlic cloves finely.
  • In the bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, pepper, and optional Dijon mustard until well combined.
  • Place chicken in a resealable plastic bag or shallow dish and pour the marinade over it, making sure all pieces are coated. Seal the bag or cover the dish.
  • Refrigerate for at least 1 hour or up to 24 hours, with 4 to 6 hours recommended for best flavor.
  • Remove chicken from refrigerator 20 minutes before cooking to allow it to come to room temperature.
  • Remove chicken from the marinade and cook it via your preferred method: grill over medium-high for 10 to 15 minutes, bake at 400°F for 20 to 25 minutes, or pan-sear until it reaches 165°F internally.
  • Let cooked chicken rest for 5 minutes before serving. Garnish with parsley or dill if desired.

Notes

For extra flavor, consider marinating the chicken overnight.
Use a meat thermometer to ensure the chicken is cooked through.
Garnishing with fresh herbs enhances presentation and taste.
