- 1 yellow onion, chopped
- 1/3 cup crumbled blue cheese
- 1/4 cup panko breadcrumbs
- 1/4 teaspoon kosher salt

- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

Instructions
- Preheat the oven to 450 degrees.
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add the chopped onion and cook, stirring occasionally, for 3-4 minutes until translucent.
- Transfer the cooked onions to a large mixing bowl and let them cool for 2-3 minutes.
- In the bowl, add the crumbled blue cheese, panko breadcrumbs, kosher salt, and ground black pepper.
- Gently mash the ingredients together with a fork until combined.
- In the same skillet, add the remaining 2 tablespoons of unsalted butter over high heat.
- Season the filet mignon steaks with salt and black pepper on all sides.
- Sear the steaks for 3 minutes on each side until browned.
- Top the steaks with the blue cheese mixture, then transfer them to the oven. Bake for 4 minutes for rare, 5-6 minutes for medium, or longer for well done.
- Allow the steaks to rest for 10 minutes covered with foil before serving.
