Ingredients

  • 1 teaspoon paprika

  • 15 oz black beans (1 can, drained and rinsed)
  • 15 oz pinto beans (1 can, drained and rinsed)
  • 1 cup frozen corn (thawed)

Instructions

  • Sauté the olive oil, ground beef, onions, and garlic in a large pot until the beef is browned.
  • Add diced tomatoes and beef broth, stirring in spices until well combined.
  • Incorporate black beans, pinto beans, and corn, mixing gently.
  • Bring to a boil, then simmer for 30 minutes to 1 hour, stirring occasionally.
  • Taste and adjust seasonings as needed before serving.
  • Optionally, use crockpot or Instant Pot methods for different cooking styles.

Notes

For a vegetarian option, skip the meat and use vegetable broth.
