Ingredients

  • 2 Tbsp avocado oil
  • 2 cups shredded rotisserie chicken
  • 15 oz canned black beans
  • 1 cup canned corn
  • 1 cup chunky salsa
  • 1 Tbsp taco seasoning
  • 1 ½ cups shredded cheese
  • ½ cup diced tomatoes
  • Optional toppings: shredded lettuce, sour cream, diced avocado, extra salsa, lime juice, cilantro

Instructions

  • Preheat oven to 450°F. Arrange tortillas on a baking sheet and brush with avocado oil. Bake for 8-10 minutes until golden.
