- 3 fresh peaches
- 2 jalapeños
- 1 1/4 teaspoons garlic powder
- 1 1/4 teaspoons fine sea salt
- 1 1/4 teaspoons paprika
- 1 1/4 teaspoons chicken bouillon granules
- 3/4 teaspoon dried oregano
- 3/4 teaspoon black pepper
- 1 1/3 cups peach preserves
- 1 1/4 tablespoons apple cider vinegar
- 1 1/4 teaspoons soy sauce
- 3/4 teaspoon minced garlic
Instructions
- Preheat oven to 420°F.
- Cut chicken into bite-sized pieces and arrange in a baking dish.
- Mix dry seasonings (paprika, garlic powder, bouillon granules, salt, oregano, pepper) and sprinkle over chicken.
- Whisk peach preserves, garlic, apple cider vinegar, and soy sauce; pour over chicken.
- Layer peach slices and jalapeños on top of the chicken.
- Bake for 15-20 minutes until golden and cooked through (internal temp of 165°F).
- Allow to rest, then serve.
Notes
Use fresh peaches for the best flavor, though canned can work in a pinch.
For less heat, remove the seeds from the jalapeños before adding.
Marinate chicken with spices for extra flavor before baking.
