Description

Ingredients

  • Coconut Oil
  • Medium Onion
  • Garlic Cloves
  • Fresh Ginger
  • Red Bell Pepper
  • Zucchini
  • Tikka Masala Curry Paste
  • Tomato Sauce
  • Coconut Milk
  • Falafel
  • Spinach
  • Fresh Cilantro
  • Salt
  • Freshly Ground Black Pepper

Instructions

  • Heat coconut oil in a large pan.
  • Sauté diced onion until soft and golden.
  • Add garlic and ginger; stir until fragrant.
  • Toss in red bell pepper and zucchini; cook until slightly softened.
  • Stir in tikka masala paste, tomato sauce, and coconut milk; simmer until smooth.
  • Nestle falafel pieces into sauce; simmer uncovered for 8-10 minutes.
  • Fold in spinach until wilted; season with salt and pepper, and top with cilantro.

Notes

Allow the curry to cool before storing in an airtight container for up to 4 days.
For freezing, use freezer-safe bags or containers for up to 3 months.
