  • ½ cup all purpose flour
  • 2 eggs
  • ⅔ cup seasoned italian bread crumbs
  • ⅓ cup freshly grated parmigiano-reggiano cheese
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh herbs, such as thyme, parsley, chives or rosemary
  • 34 boneless skinless chicken breasts (about pounds), pounded ¼"-thick
  • salt and freshly ground black pepper
  • ¼ cup olive oil
  • lemon wedges, for serving

Instructions

  • Prepare three large shallow bowls: place flour in the first, beat the eggs in the second, and mix breadcrumbs, Parmesan cheese, salt, pepper, and herbs in the third.
  • Season chicken breasts with salt and pepper. Dredge each chicken breast in flour, shaking off excess. Dip in egg mixture, then coat with breadcrumb mixture, setting breaded chicken aside on a plate. Repeat with remaining chicken.
  • Heat olive oil in a large sauté pan over medium heat. Add chicken breasts to the pan, cooking for 2 to 3 minutes until golden brown. Flip and cook for an additional 2 to 3 minutes until cooked through. Serve immediately with lemon wedges.

Notes

For uniform portion sizes, cut larger chicken breasts before pounding.
Prepare the chicken up to a day in advance and refrigerate to save time.
