- 3 tablespoons vegetable oil (divided; 45 ml)
- 2 tablespoons Sriracha (30 ml)
- 0.5 teaspoon cornstarch (up to 1 teaspoon)
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 inch fresh ginger (peeled and minced; 2.5 cm piece)
- 3 cloves garlic (peeled and minced)
- 1 teaspoon chili powder
- Steamed rice
- Tenderstem broccoli
- Dry roasted peanuts (chopped)
- Lime wedges
- Green onions (sliced)
Instructions
- Whisk together 2 tablespoons of vegetable oil, Sriracha, cornstarch, soy sauce, honey, ginger, garlic, and chili powder to create the marinade.
- Add chicken strips to the marinade, coat well, and refrigerate for at least 30 minutes.
- Cook rice and steam broccoli while the chicken marinates.
- Heat remaining vegetable oil in a skillet over medium-high heat.
- Cook marinated chicken in the skillet for 5-10 minutes until cooked through and golden.
- Pour reserved marinade into the skillet and simmer for 2 minutes to thicken.
- Serve the chicken over rice, garnish with peanuts, green onions, and lime wedges.

Ensure the skillet is hot before adding chicken to get a proper sear.
