Description

These Decadent Cottage Cheese Date Brownies are a delightful treat featuring a fudgy chocolate base and creamy cottage cheese topping. Simple to make and a perfect sweet snack without refined sugar, they’re healthy and rich in flavor!


Ingredients

  • 10 dates (soaked in hot water for 10 minutes to soften)
  • 1/2 cup almond flour
  • 4 tbsp chocolate protein powder
  • 2 tbsp cocoa powder
  • 2 1/2 tbsp maple syrup
  • 1 tsp vanilla
  • 1/8 teaspoon salt
  • 1 cup cottage cheese
  • 1/2 cup vanilla protein powder
  • 1 1/4 cups almond flour
  • 2 1/2 tbsp maple syrup
  • 2 tbsp cashew butter
  • 1 1/2 tsp vanilla
  • 1/3 cup mini chocolate chips

Instructions

  • Soak the dates in hot water for 10 minutes, then drain. Combine dates, chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt in a food processor. Blend until smooth to form the brownie base.
  • In a mixing bowl, combine cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla. Mix until smooth, then gently fold in mini chocolate chips.
  • Line an 8×8 inch baking dish with parchment paper. Press the date-chocolate base evenly in the bottom. Spread the cottage cheese mixture over the brownie layer, smoothing it out evenly.
  • Freeze the dish for at least 1 hour. Once firm, lift the brownies out using the parchment paper and cut into squares. Serve directly from the freezer or allow to sit at room temperature before serving.

Notes

Use high-quality cottage cheese for a better texture and flavor.
Vary the sweetness by adjusting the amount of maple syrup based on your preference.
These brownies can also be stored in the freezer for a longer shelf life.
