- 1.5 lb red skinned potatoes
- 2 ropes andouille sausage
- 3–4 sweet corn on the cob
- 1 onion
- 5 garlic cloves
- 4 cups chicken broth
- 1–2 cups water
- 2 tablespoons Old Bay seasoning
- 2 tablespoons Creole/Cajun seasoning
- 2 lbs raw jumbo shrimp
- 1 lemon
- Chopped parsley
Instructions
- Wash and halve potatoes, add to the crockpot.
- Layer andouille sausage, corn, onions, and minced garlic on top.
- Pour in chicken broth and water, then sprinkle Old Bay and Creole seasoning; stir gently.
- Cover and cook on Low for 5–6 hours or High for 3–4 hours.
- In the last 30–60 minutes, add thawed shrimp, cover, and cook until pink and opaque.
- Add lemon juice and parsley before serving.
Notes
Avoid overcooking shrimp for the best texture.
Feel free to add other vegetables like bell peppers and zucchini.
