  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 medium carrots (peeled and thinly sliced)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 packet (19-ounce) frozen cheese tortellini
  • 1 ½ cups heavy cream
  • 2 cups fresh baby spinach leaves
  • 1 cup shredded Parmesan cheese
  • Parsley for garnish

Instructions

  • Brown the sausage in a skillet, then drain excess grease.
  • Transfer the sausage to the slow cooker.
  • Add diced onion, minced garlic, and sliced carrots to the slow cooker.
  • Pour chicken broth into the slow cooker, add Italian seasoning, salt, and black pepper, then stir.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until carrots are tender.
  • About 30 minutes before serving, add frozen cheese tortellini to the mixture.
