Description

Crockpot Mexican Pulled Pork offers tender, juicy flavors with zesty lime juice and aromatic spices. Ideal for tacos, bowls, or comforting dinners.


Ingredients

  • 4 lb pork shoulder
  • 1 large onion (quartered)
  • 6 cloves garlic (smashed)
  • 1 cup lime juice
  • ½ cup chicken broth
  • ½ cup green chiles (chopped)
  • 1 tbsp chipotle in adobo (optional)
  • 1 tbsp kosher salt
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp red chili flakes
  • Oil (for searing)

Instructions

  • Pat and season the pork shoulder with salt and spices.
  • Sear the pork in a skillet until golden brown.
  • Transfer pork to slow cooker, add onion, garlic, green chiles, lime juice, and broth.
  • Cook on LOW for 10-12 hours until tender.
  • Shred the pork and return to the slow cooker with juices.
  • Let it soak on the WARM setting for an additional 10-15 minutes.
  • Serve in tortillas or over rice.

Notes

For a smokier flavor, include chipotle in adobo.
Store leftovers in an airtight container for up to 4 days in the fridge.
Freeze any leftovers for up to 3 months.
