- 4 lb pork shoulder
- 1 large onion (quartered)
- 6 cloves garlic (smashed)
- 1 cup lime juice
- ½ cup chicken broth
- ½ cup green chiles (chopped)
- 1 tbsp chipotle in adobo (optional)
- 1 tbsp kosher salt
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp red chili flakes
- Oil (for searing)
Instructions
- Pat and season the pork shoulder with salt and spices.
- Sear the pork in a skillet until golden brown.
- Transfer pork to slow cooker, add onion, garlic, green chiles, lime juice, and broth.
- Cook on LOW for 10-12 hours until tender.
- Shred the pork and return to the slow cooker with juices.
- Let it soak on the WARM setting for an additional 10-15 minutes.
- Serve in tortillas or over rice.
Notes
For a smokier flavor, include chipotle in adobo.
Store leftovers in an airtight container for up to 4 days in the fridge.
