Ingredients

  • 1 lb kielbasa sausage (sliced)
  • 1 medium white or yellow onion (diced)
  • 2 large carrots (sliced)
  • 2 stalks celery (diced)
  • 1 large russet potato (peeled and diced)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire
  • 1 (16 oz) can pinto beans (rinsed and drained)
  • 1 (15.25 oz) can corn (drained)
  • 1 (14.5 oz) can diced tomatoes (do not drain)
  • 2 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 2 tablespoons corn starch
  • Salt and pepper (to taste)

Instructions

  • Add stew meat and kielbasa sausage to the crockpot.
  • Combine diced onion, sliced carrots, celery, and diced potatoes.
  • Pour in beef broth, Worcestershire sauce, beans, corn, and diced tomatoes.
  • Add chili powder, garlic powder, and oregano; stir well.
  • Cover and cook on low for 7-8 hours or high for 4-6 hours.
  • For a thicker stew, mix corn starch with cold water, then stir into the crockpot 10 minutes before serving.
  • Season with salt and pepper before serving.

Notes

For richer flavor, sear the beef before adding it to the crockpot.
Consider adding frozen vegetables in the last hour of cooking to maintain their texture.
