Ingredients
- Bacon strips (4)
- Lean ground beef (1 pound)
- Yellow onion (1, diced)
- Garlic (2 cloves, minced)
- Salt & black pepper (½ teaspoon each)
- Beef broth (4 cups)
- Russet potatoes (3 medium, peeled & diced)
- Cheddar cheese soup (1 can, 10.5 ounces)
- Heavy whipping cream (1 cup)
- Freshly grated cheddar cheese (8 ounces)
- Pickle slices (optional for serving)
- Diced tomatoes (optional for serving)
Instructions
- Cook the bacon in a skillet until crispy, then chop and set aside.
- Brown the ground beef in the same skillet and add onions, garlic, salt, and pepper.
- Transfer the beef mixture to a crockpot and add beef broth, potatoes, and cheddar cheese soup. Stir to combine.
- Cook on low for 6–8 hours or high for about 4 hours.
- Stir in the heavy whipping cream and cheddar cheese 30 minutes before serving.
- Serve warm topped with crispy bacon, pickle slices, and diced tomatoes if desired.
