Description

Crockpot Cheeseburger Soup is your go-to cozy meal featuring delicious bacon, creamy cheese, and chunky potatoes. Easy to make and perfect for chilly nights!


Ingredients

  • Bacon strips (4)
  • Lean ground beef (1 pound)
  • Yellow onion (1, diced)
  • Garlic (2 cloves, minced)
  • Salt & black pepper (½ teaspoon each)
  • Beef broth (4 cups)
  • Russet potatoes (3 medium, peeled & diced)
  • Cheddar cheese soup (1 can, 10.5 ounces)
  • Heavy whipping cream (1 cup)
  • Freshly grated cheddar cheese (8 ounces)
  • Pickle slices (optional for serving)
  • Diced tomatoes (optional for serving)

Instructions

  • Cook the bacon in a skillet until crispy, then chop and set aside.
  • Brown the ground beef in the same skillet and add onions, garlic, salt, and pepper.
  • Transfer the beef mixture to a crockpot and add beef broth, potatoes, and cheddar cheese soup. Stir to combine.
  • Cook on low for 6–8 hours or high for about 4 hours.
  • Stir in the heavy whipping cream and cheddar cheese 30 minutes before serving.
  • Serve warm topped with crispy bacon, pickle slices, and diced tomatoes if desired.
